Jamie Oliver's recipe... very tasty! (Pineapple's are plenteous and cheap this time of year.)
- 1 ripe pineapple
- 4 heaped tablespoons caster sugar
- 1 handful fresh mint
You are supposed to slice the pineapple into quarters then lengthways - but I am lazy and just cut unto cubes! Bash mint and sugar in a pestle and mortar. Spread over pineapple. Serve with plain yogurt if desired.
